It’s a Stout Smackdown! We’ll be tapping several limited release Little Joe Oatmeal stouts! The treatments will include aging over cocoa nibs, coffee and chicory, chiles, tart cherries, and bourbon barrel aged wood!

Our FEATURED event of the week. Bet you didn’t know our Head Brewer was a Pit Master too…. and smoking meat is his second passion after brewing beer of course.
Join us for a good old fashion Brew N Que. We’ll be pairing Pair O’ Dice brews with lots of competition quality Texas slow smoked brisket.

Come experience craft beer and cheese pairings with Pair O’ Dice Brewing’s Head Brewer and Mazzaro’s Cheesemonger!

Construction Recap Week #3

We are cruising along with our buildout.  Even though last week was a holiday for most, our team continued to make progress!  Here is a recap of what happened last week:

  • Dug out the dirt from under the cut concrete to make way for our plumbing
  • Installed all plumbing for drains, cold, and hot water
  • Passed our plumbing inspection!
  • Put the dirt back in the trenches, this was a very labor intensive and methodical task
  • “Blocked out” the big pass through
  • Drilled the existing slab for rebar
  • Cut out the windows for the office and lab
  • Framed the lab window

Construction Recap Week #2

Last week was another busy week at Pair O’ Dice as we continued making progress on our construction!  We have hit a pretty good stride now and things are moving along.  Here is the recap of what happened last week:

  • Opened up the bathroom wall to run plumbing for our water fountain.
  • Received our plumbing materials and began some of the plumbing work.
  • Cut and removed concrete for all of our drains and underground plumbing.
  • Framed up our tasting room utility closet.
  • Framed up our tasting room!

Commence Construction!

If you have been following along on Facebook, you know that we received our early start/Demo permit last week and we began demo! Shortly after that, we received all other permits needed to complete construction on Pair O’ Dice!

There will be a lot of pictures for us to post now.  If you want to watch us post about our progress in real time, please follow us on our Facebook page!  We will be posting cool pictures as we take them there.  But we will also be keeping a weekly recap here with more pictures!

Here is the recap for week 1:

  • Demo’d 2 offices and a utility closet in the first unit to make  way for our future tasting room!
  • Cut out 2 pass throughs in the separation wall between units 1 and 2
  • Demo’d 2 offices in the second unit
  • Removed one side of the pass through into the third unit
  • Demo’d one office in the third unit
  • Outlined the drains and plumbing on the concrete
  • Received all permits for our construction!

 

We are getting closer to pouring pints of Pair O’ Dice! Cheers!!

Quick Update

We are still awaiting for final approval from the city, but we did get some questions back
which we answered and resubmitted. So we are still awaiting that final approval.

There are also some exciting changes in store for Pair O’ Dice so stay tuned!

Side note, we had a technical issue and just realized our posts were set to private for the past month or so. Plans Submitted!

Our final plans are ready for submission!

We have completed our architecture plans and have submitted them to the city for review.

We are now anxiously awaiting approval so we can start construction!

Conditional Use Approved!

A quick update. Our conditional use application has been accepted by the City! That means we are allowed to open our brewery and tasting room at our proposed location!

We have also submitted our Federal licensing application this week. Whew what a process
getting all of the information together, but we are relieved we have it submitted!

We are getting closer to pouring our first pints!

San Diego

Pair O’ Dice in San Diego!

We spent the end of last week visiting breweries in San Diego, which gave us the opportunity to drop into Premier to see how things were coming along with our system. Our system wasn’t on the floor yet, but we got to check out their whole operation and actually got to see Due South’s mash rakes being packaged for shipping.

We, of course, visited several breweries while out there and got to mingle with some of the brewers. A big THANK YOU to our gracious host Alan for showing us around and getting us up close with the brewers and equipment!

We were also told our equipment would be in sooner than we had anticipated! So that’s really good news for us.
