We are still awaiting for final approval from the city, but we did get some questions back
which we answered and resubmitted. So we are still awaiting that final approval.
There are also some exciting changes in store for Pair O’ Dice so stay tuned!
Side note, we had a technical issue and just realized our posts were set to private for the past month or so. We set them to public and then we were having issues with our photo uploads. Our final plans are ready for submission!
We have completed our architecture plans and have submitted them to the city for review.
We are now anxiously awaiting approval so we can start construction!
A quick update. Our conditional use application has been accepted by the City! That means we are allowed to open our brewery and tasting room at our proposed location!
We have also submitted our Federal licensing application this week. Whew what a process
getting all of the information together, but we are relieved we have it submitted!
We are getting closer to pouring our first pints!
Pair O’ Dice in San Diego!
We spent the end of last week visiting breweries in San Diego, which gave us the opportunity to drop into Premier to see how things were coming along with our system. Our system wasn’t on the floor yet, but we got to check out their whole operation and actually got to see Due South’s mash rakes being packaged for shipping.
We, of course, visited several breweries while out there and got to mingle with some of the brewers. A big THANK YOU to our gracious host Alan for showing us around and getting us up close with the brewers and equipment!
We were also told our equipment would be in sooner than we had anticipated! So that’s really good news for us.
Our head brewer at Due South Brewing
We spent last Thursday with our friends over at Due South Brewing in Boynton Beach. We got a chance to hang out at their brewery and they even let our head brewer do some brewing with them for the day.
They have the same system we ordered so it was a good learning experience to see the system in action and get some experience with the system. We had a great time and we are thankful that they were so gracious to let us come over and play around in their brewery a little bit and let us ask a million questions!
At the end of the day, our head brewer again had that familiar feeling of being so close to our brewing equipment, but knowing our set was so far away! It was a fun experience and a tease at the same time!

Things are starting to move quicker at Pair O’ Dice we hired an architect earlier this month, and he has done an amazing job at laying out our flow and setting the brewery up for expansion opportunities. We are awaiting some final drawings so we can submit them for review.
We spent last week in Washington DC where we attended the Craft Brewers Conference. It was an awesome time hanging out with other brewers and attending some of the seminars that were offered. Topics ranged from business management, to quality control, and our favorite – technical brewing.There was a trade show where we got to mingle and talk with brewery supply vendors. Our equipment manufacturer was there and even had a copy of our brewhouse on display. Our head brewer was enthralled and even a little envious! Our brewery was so close, yet so far away. Unfortunately we had to leave the floor display there, and are anxiously waiting to get our equipment in.
Of course no brewers conference is complete without copious amounts of sampling! It was good to be able to try many other products that are not available in our local area. Man there are some fantastic beers being brewed around the country.
